Lacto-fermentation (Mjölksyrning) is a method of preserving vegetables and creating probiotic-rich food with many flavors. During the workshop, we go through the entire process. Each participant may make a jar with any flavoring from the herbs supply. Afterward we go through the basics of vinegar making, preparing apples to make vinegar. Each participant may make one jar of apple vinegar. The jars are then taken home for the continuation of the fermentation process and for you to taste the result. Fresh vegetables and apples are included in the course fee.
The workshop is provided by Dr. Agnès Brosset, founder of Nordiska Örter, the first herb farm in Sweden and situated in Hospitalsträdgården in Uppsala. Nordiska Örter is a garden and a shop providing local, fresh and sustainable dried herbs and herbal teas as well as workshops and education around herbs that connect people to their local environment and increase their self-sufficiency.
